This is top-quality Pata Negra ham from pigs fed on a mixture of acorns and other grains, from Guijuelo in Salamanca. Sliced thinly to give a lovely rich flavour and melt-in-the-mouth texture. Serve fully at room temperature, perhaps with some of our breadsticks made using extra-virgin olive oil and a glass of chilled Fino sherry or a red Rioja.
